      When Cacio meets Pepe, it is a paper 30m

      Cacio and pepe is an iconical Roman pasta dish. Inspite its ultra-short and simple list of ingredient, achieving a good texture is challenging. In this talk, we present the IG nobel winner research on the phase diagram of the cacio and pepe sauce, assessing the key role of starch in stabilizing the water cheese mixture. We finally propose a scientific recipe for the perfect cacio and pepe.
