WATER: A MATTER OF SOFT MATTER

Description
Water exhibits many of the tenets of a Soft Matter system, including structural organization on multiple length and time scales. This gives rise to a variety of anomalous behaviour, which has puzzled scientists for over a century. Here I will present recent studies suggesting that indeed such unconventional phenomena can be understood using simple models developed in the context of Soft Matter. I will also go through some of the discoveries that were inspired by such models, including new crystal structures, new solid-solid interfaces, new grain boundaries, and new dynamical lines, that challenge the way we usually think about liquids, solids, and amorphous solids.
